Title: The Hungry Kids Easy Omelette

Purpose: Daniel's Little Secret: To try eggs with mustard!
Materials:
Pinch of salt
Pinch of pepper
Pinch of oregano in eggs and pan
Two eggs beaten
2 Tbsp canola oil
1 tsp mustard
1/4 cup tomatoes
1/4 cup cheese (low fat)
1/4 cup mushroom
Tools:
Medium sized bowl
Fork or a whisk
Non-stick frying pan
Spatula
Spoon
Method:
1. Beat the eggs in a medium sized bowl.
2. Add mustard--Just try it! You'll like it.
3. Add first three above ingredients.
4. Beat for about 1 minute.
5. Heat frying pan on medium.
6. Add canola oil.
7. Add mushrooms when the pan is hot. Partly fry mushrooms if you like them a bit chewy. Fully cook them if you like them soft.
8. Add oregano to pan.
9. Pour egg batter into frying pan.
10. Add cheese when egg is drying at the top--depends on your taste.
11. Fold egg in half or thirds.
12. Voila. You are done. Enjoy!

Materials:
1 pita
Pinch of salt
Pinch of oregano
1/4 cup mushrooms
1/2 cup arugula
1/8 cup olive oil
1/4 cup cheese (low fat)
1 1/2 tsp canola oil
Salami--lean cut or thinly sliced, turkey, tofu (protein), chicken --your choice. Pick one.
Tools:
Rubber spatula
Frying pan
Tongs
Plate
Method:
1. Brush olive oil on pita bread--use rubber spatula.
2. Sprinkle first two ingredients on it.
3. Add canola oil to the frying pan.
4. Heat at medium.
5. Lightly fry or grill meat/protein of choice. Take meat out when cooked to your liking--use tongs for this.
6. Lightly fry mushrooms. Take mushrooms out when cooked to your liking--use tongs.
7. Add meat/protein to your pita bread.
8. Add low fat cheese.
9. Add arugula--Just try it. You'll like it! Enjoy!

Materials:
1/2 cup shrimp
1/4 pot of water
1 pkg of prepared noodles
Pinch of pepper
Pinch of salt
1/8 tsp of oregano
Pinch of cayenne pepper
1/8 tsp garlic powder
1/8 tsp chili powder
2 tsps canola oil
Few pieces of fresh dill
Tools:
Medium pot
Strainer
Tongs
Frying pan
Bowl
Method:
1. Boil the noodles for about 5 minutes or until al dente. (little chewy, not soft)
2. Strain the noodles. Set aside in a bowl.
3. In a separate bowl, add all spices to the shrimp.
4. Blend well.
5. Add canola oil to the frying pan.
6. Heat at medium.
7. Fry shrimp in heated pan. Fry for about 3-4 minutes.
8. Add shrimp to noodles
9. Add dill--Just try it! You'll like it!

4. Remove from pan. Wipe off excess oil with a paper towel.
5. Add to soft taco shell.
6. Add your favorite toppings: avocado, tomatoes, mushrooms etc. Enjoy!

Baked Jerk Salmon
1 medium sized salmon/trout fillet
4 Tbsp of Jerk seasoning (to taste)
2 Tbsp of garlic powder (to taste)
1 Tbsp of salt (to taste)
8 asparagus'
1 whole medium eggplant
1 onion
cooking spray
olive oil
Heat a convection oven to 350 degrees.
Wash fillet, (we wash with vinegar and water). Place fillet on a greased baking pan. Sprinkle fish with garlic powder, jerk seasoning, and salt making sure the spices are evenly spread across the whole fish. Wash and slice eggplant leaving skin on. Place eggplant on fish. Spray canned cooking spray on eggplant to maintain a moist texture. Cut the asparagus about 11/4 inches from the bottom of the asparagus. Arrange asparagus at the sides of the fish. Drizzle olive oil on the fish and vegetables.
